I would confess right from the start I am by no means an expert baker, and come to think about it, I’m not an expert writer either – as may become more evident as you read!
 
Over the years I read so many different books and recipes on the subject - which only served to confuse me even more! Some are more complicated than others, many are quite technical or, in my opinion, over complicated. This made me realise there is really no right way or wrong way to bake good sourdough so I chose to do it - 'my way!'
